Naan pizza

Last week our local grocery store did a demonstration with pizzas made using naan bread. Great idea! It was delicious and a perfect dinner for one.


Ingredients 
Olive oil
1/2 cup of BBQ chicken (I used leftovers)
1/4 cup of onion
5 grape tomatoes (cut in half)
2 tablespoons of cheese (we are obsessed with Dubliner)
1 tablespoon cilantro

Preheat oven to 350 degrees.
Brush bread with olive oil.
Decorate with onion, chicken, cheese and tomatoes.
Bake for about 8 minutes or until cheese is melted. 
Spread cilantro over top of pizza.
Splash with a little Franks Red Hot and enjoy!

Mexican Potato Salad


I knew we were having Mexican last night and I had a bag of potatoes on the counter that I didn't want going bad on my watch... so I combined a few recipes to make an incredible Mexican potato salad. Yum!

INGREDIENTS

  • Salt and pepper
  • 3 pounds of potatoes, scrubbed
  •  1  and 1/2 cup mayonnaise
  • 2 tablespoons shredded hatch peppers
  • 1 lime juiced
  • 1 ear of cooked corn kernels
  •  salt
  •  pepper
  • 1 small red onion
  • 2 tablespoons dijon mustard
  • 1 tablespoon of hot sauce
  • 1 teaspoon garlic powder
  • 1 teaspoons paprika
  • 1/2 teaspoon cumin

DIRECTIONS

  1. STEP 1

    In a large pot, bring potatoes to a boil in salted water over high. Reduce to a simmer and cook until tender when pierced with a knife, 15 to 20 minutes. Drain and let cool completely. Peel and cut potatoes into 1 1/2-inch pieces. Cook corn and cut.
  2. STEP 2

    In a large bowl, combine remaining ingredients. Add potatoes and toss to combine. Season with salt and pepper. To store, cover and refrigerate.*

Sweet Potato Gnocchi with Summer Squash and Feta


Ingredients

Directions

  1. Cook the gnocchi according to the package directions; drain and return it to the pot.
  2. Meanwhile, heat the oil in a large skillet over medium-high heat. Add the squash, garlic, tomatoes, and ¼ teaspoon each salt and pepper. Cook, tossing occasionally, until crisp-tender, 6 to 8 minutes.
  3. Add the squash to the gnocchi and toss to combine. Serve sprinkled with the Feta and basil. Season with pepper.

*I substituted summer squash with butternut squash because I had some from a vegetable share. I diced, tossed in olive oil, and baked @400 degrees for 30 minutes and then added it to the garlic-tomato mixture.

Margarita recipe

There are few things that can disappointment me as much as a sour mixed margarita! I expected to come to Texas and every restaurant would have margaritas that were pleasing my palette... Not the case. Lupe Tortilla has one an incredible one but haven't been impressed by many others. Below is a picture of it... With The little carafe on the side; how can you not love it?!


Here's my recipe, hope you like it!
1 container of Simply Limade
The juice of 4 fresh limes (plus slices for garnish)
White tequila (I pour while counting to 8)
A splash of orange juice
Rim each glass with a combo of kosher salt and sugar

Mix it, shake it, pour into a festive glass, enjoy! :)

Salsa recipe


2 roma tomatoes
Handful of cilantro
1 tablespoon of minced garlic
A pinch of salt 
1/2 of a medium onion 
1/3 of a jalapeƱo (add or lessen based on how spicy you like it) 
Juice from half a lime
A pinch of salt

Add it all to the food processor on chop mode. Pulse. Enjoy!

Mojito Recipe

What's more refreshing than a summer cocktail? Mojitos are one of my favorites! The best part of my recipe is that you don't have to pick mint leaves out of your teeth all night... Just add it to your simple syrup and omit all that muddling! 

Simple syrup:
1 cup sugar, 1 cup water, A few mint sprigs
Cook over medium high heat until the sugar dissolves. Let cool.

Mojito:
About 3 tablespoons simple syrup, half of 1 lime- squeezed, about a cup of simply limeade, 1 shot of rum. *adjust to your liking*
