Tomato & goat cheese

After several dinner parties under my belt, I've come to realize that many people have their staple appetizers. You can ask any of my friends, this is my staple. 



10 oz package of grape tomatoes 
1/3 cup of olive oil (make sure the entire bottom of your pan is covered)
2 tbsp chopped mint 
1 tbsp minced garlic (adjust to your liking)

Combine all and bake for 40-60 minutes at 350. Make sure tomatoes are easily mashed. I usually mash lightly with a fork so someone doesn't bite into a tomato and squirt someone else in the face.

Serve with fresh, warm artisan bread with  goat cheese smeared on it.
